The carrot has been called the poor man’s ginseng. There are more than 100 species of
carrots ranging from not only in colors but also its size from as small as two
inches to three feet. We usually
associate carrots with the colour orange, carrots can actually be found in a
host of other colours including white, yellow, red, or purple.
Carrots taste better steamed. Carrots are perhaps best known for their rich
supply of the antioxidant nutrient that was actually named for them: beta-carotene. The deeper the orange-colour, the more
beta-carotene is present in the carrot.
The carrot contains calcium, potassium, vitamin B and C. Calcium helps prevent the narrowing of the
blood vessels resulting from contracting of the muscular wall of the vessels. Potassium promotes regular heartbeat. Vitamin
B improves metabolism. Vitamin C protects cells against free radicals and
strengthens blood vessel walls. The

heart attacks, warding off certain cancers and many others.
