Fruits and vegetables should always be eaten unpeeled to give you the full nutrients.  Fruit peel in general is peeled off or scraped in the majority of fruits even when it is edible.  Peel is a rich source of dietry fibre which helps prevent constipation by reducing gastro-intestinal transit time.
If foods must be chopped up, then they should be washed beforehand as washing afterwards means that the nutrients are washed away.  Foods should best be processed directly after cutting as the chopping destroys the cell structure, which fosters the loss of vitamins.
A way of a least slowing the loss of vitamin C is drizzling the cut pieces with vinegar or lemon juice and storing them in cool place.  And to maintain as much vitamin C as possible, stewing (cooking vegetables with very little water) is recommended.

Knees are one of the hardest working joints of the legs.  They support nearly the whole weight of the human body.  Thus they are vulnerable to both acute injury and the development of osteoarthritis.  The knees are the largest joint in the human body and are very complicated.
Knee pain is commonly caused by trauma, joint misalignment, and degeneration as well as by conditions like arthritis.
The most common knee disorder is generally known as patellofemoral syndrome which is characterize by pain or discomfort seemingly originating from the contact of the posterior (front) surface of the patella (back of the kneecap) with the thigh bone.
The second major class of knee disorder involves a ligament or tendon tear, slippage, or dislocation that impairs the structural ability of the knee to balance the leg.
Other cause of pain may be from excessive on, and wear of, the knees, in combination with such things as muscle weakness and being overweight.
